Grand Hyatt Jeju Elevates Culinary Landscape with the Debut of Authentic Shanghainese Restaurant 'Blue Dragon'

Jeju Island, South Korea – The Grand Hyatt Jeju, a prominent feature of the Jeju Dream Tower integrated resort, has further enriched its diverse culinary offerings with the grand opening of 'Blue Dragon,' a specialty restaurant dedicated to the exquisite flavors of Shanghainese cuisine. Situated on the hotel's 38th and uppermost floor, Blue Dragon promises not only an authentic gastronomic journey to Shanghai but also breathtaking panoramic views of Jeju Island. This latest addition completes the Grand Hyatt Jeju's impressive quartet of regional Chinese dining experiences, joining the acclaimed 'China House' (Peking and Cantonese), and 'Hot Pot' (Sichuan), thereby offering guests a comprehensive exploration of China's four major culinary traditions.

At the helm of Blue Dragon is Wu Yuan, a highly accomplished executive chef bringing an impressive 17 years of experience honed in the kitchens of five-star hotels across China and prestigious high-end restaurants in Shanghai. Chef Wu's culinary vision for Blue Dragon centers on a modern reinterpretation of classic Shanghainese dishes, meticulously crafted using premium local Korean ingredients, including the renowned Jeju black pork and fresh, locally sourced seafood.

The essence of Shanghainese cuisine, often characterized by the term 'nóng yóu chì jiàng' (濃油赤醬) – meaning rich oil, red sauce – will be faithfully represented at Blue Dragon. This culinary style is distinguished by its deep and complex soy sauce-based flavors, often striking a harmonious balance between sweetness and savory notes. The generous use of oil imparts a signature glossy, reddish-brown hue to the dishes, while influences from neighboring regions like Suzhou and Zhejiang contribute to a nuanced and layered taste profile. Chef Wu and his dedicated team aim to transport diners directly to the bustling culinary scene of Shanghai through their authentic preparations.

Beyond the refined ambiance and the promise of an elevated dining experience, Blue Dragon also intends to cater to a broader audience by progressively introducing a selection of casual Shanghainese dishes at accessible price points. This strategic move will allow both hotel guests and local residents to savor the unique flavors of Shanghai in a relaxed setting, complementing the more elaborate offerings on the menu.

Lotte Tour Development, the operator of Jeju Dream Tower and the Grand Hyatt Jeju, highlighted the strategic importance of this new restaurant, particularly in light of the increasing influx of international visitors. "With a robust schedule of 153 weekly direct flights connecting Jeju to 11 major Chinese metropolises, including Shanghai, Beijing, Hangzhou, and Nanjing, we are witnessing a consistent rise in our international clientele, especially from China," stated a company representative. "Strengthening our food and beverage options to cater to this diverse global palate is a key priority. Blue Dragon will offer our international guests an authentic taste of Shanghai, while providing domestic diners with a unique opportunity to experience the city's renowned local gastronomy without having to travel abroad. We anticipate a very positive reception."

The Jeju Dream Tower has firmly established itself as a premier landmark resort on the island, evidenced by the fact that international guests accounted for over 65% of its occupancy in April. This strong appeal to a global audience, encompassing visitors from China, Taiwan, Singapore, Japan, the United States, and beyond, underscores the resort's growing international significance.

The commitment to culinary excellence is further underscored by the recruitment of a formidable team of culinary professionals. In addition to Executive Chef Wu Yuan, seven other seasoned chefs specializing in various aspects of Chinese cuisine have joined the Blue Dragon team. This collective expertise is expected to elevate the restaurant to the pinnacle of Chinese gastronomy in Jeju.

To commemorate its grand opening, Blue Dragon is offering a special five-course set menu priced at 99,000 Korean Won. This introductory menu provides a comprehensive tasting of authentic Shanghainese flavors, featuring an array of enticing dishes. Appetizers include an eel roll with soy and huangjiu sauce, smoked fish prepared in the Shaoxing wine style, and a delicate grilled duck and tofu skin zucchini roll, alongside Shanghai-style sweet and sour pork ribs and a flavorful soup. The main courses showcase a luxurious braised abalone with succulent pork belly and a savory stir-fry of shiitake mushrooms and seasonal vegetables in oyster sauce. For the main course, guests can enjoy scallion oil-tossed noodles and the iconic Shanghai xiaolongbao (soup dumplings). The culinary journey concludes with a selection of traditional Shanghainese desserts, including fermented glutinous rice dumplings, a unique Maotai-infused ice cream, and a selection of fine teas.

With the launch of Blue Dragon, the Grand Hyatt Jeju not only expands its already impressive dining portfolio but also solidifies its position as a leading destination for international travelers seeking authentic and high-quality culinary experiences. The introduction of genuine Shanghainese cuisine, prepared by a team of expert chefs, is poised to become a significant draw, further enhancing Jeju Island's appeal as a global tourism hub.
