Gamja-sujeobi: A Comforting Korean Noodle Soup

Gamja-sujeobi, a beloved Korean dish, is a hearty and comforting noodle soup made with thick, chewy handmade dumplings and a flavorful broth. The name literally translates to "potato hand-pulled noodles," referring to the dumplings that are torn off by hand and added to the boiling broth.

Ingredients:

For the dumplings: Russet potatoes, All-purpose flour, Salt
For the broth: Dried anchovies, Dried kelp, Green onions, Garlic, Soy sauce, Salt
Additional ingredients: Zucchini, Carrots, Mushrooms

Preparation:

Make the broth: Simmer dried anchovies and kelp in water for a rich and savory base.
Prepare the dumplings: Grate potatoes, squeeze out excess moisture, and mix with flour and salt. Form the dough into a ball, and tear off small pieces to create the dumplings.
Cook the dumplings: Add the dumplings to the boiling broth.
Add vegetables: Sauté zucchini, carrots, and mushrooms, then add to the soup.
Season: Adjust the flavor with soy sauce and salt.

Serving Suggestions:

Gamja-sujeobi is traditionally served hot, often with a side of kimchi for a spicy kick. It's a perfect comfort food for cold days.

Gamja-sujeobi is a good source of carbohydrates, protein, and fiber. Potatoes provide essential vitamins and minerals, while the broth is packed with umami flavor and nutrients.
