Bodol Miyeok: A New Take on a Traditional Dish

Gyeongju's 'Bodol Miyeok' offers a fresh perspective on a classic Korean dish, transforming the humble seaweed soup (miyeok-guk) into a premium dining experience. While traditionally seen as a homemade comfort food, particularly for new mothers, this specialty restaurant is changing perceptions and drawing crowds with its unique and healthy recipes.

The owner, Kwon Hyuk-seok, was a successful brand manager in Daegu before a visit to a miyeok-guk restaurant in Busan completely changed his mind about the dish. Initially skeptical about paying for a food he had always eaten at home, he was "completely surprised" by the rich and flavorful taste that was distinct from any homemade version. This experience inspired him to open his own restaurant in his hometown of Gyeongju, offering locals a new and healthy dining option.

Signature Menu Items 

Bodol Miyeok's soups are made with a clear clam broth base, giving them a refreshing and savory flavor.

Flounder Miyeok-guk (Gajami Miyeok-guk): The restaurant's most popular dish, this soup features a whole flounder, adding a delicate and clean taste to the rich broth. It's a favorite among women for its mild flavor and health benefits.
Clam Miyeok-guk (Jogae Miyeok-guk): Perfect for those seeking a light and refreshing meal, this soup combines the signature clam broth with tender clam meat for a clean and satisfying flavor. It is a popular choice for hangovers.
Abalone and Clam Miyeok-guk (Hwaljeonbok Jogae Miyeok-guk): This premium, invigorating soup features fresh abalone from Wando, adding a chewy texture and the rich flavor of the sea.
Beef Miyeok-guk (Sogogi Miyeok-guk): For those who prefer a more traditional flavor profile, this soup combines the savory clam broth with the familiar taste of beef.
 

More Than Just Miyeok-guk 

Bodol Miyeok also offers a variety of set meals and side dishes to complement the main course.

Dol-sae-jeon-jang Set Menu (돌새전장 정식): A popular "rice thief" menu featuring traditional marinated crab, shrimp, and abalone. It is served with a side of miyeok-guk.
Charcoal-grilled Bulgogi Set Menu (Seoksoebulgogi Jeong-sik): Grilled over charcoal, this sweet and savory bulgogi is a favorite with children. A spicy version is also available.
Dried Pollack Jorim Set Menu (Kodari Jorim Jeong-sik): This dish features chewy and spicy-yet-savory braised dried pollack, a perfect pairing with the miyeok-guk.
 

Commitment to Quality 

The owner emphasizes his commitment to providing the freshest and healthiest flavors possible. He notes that all dishes are prepared to order, which may take a little more time but ensures that each bowl is made with care and dedication.

Bodol Miyeok also plans to introduce seasonal specials, including the country's first-ever miyeok-guk with chilled buckwheat noodles (miyeok makguksu) and abalone cold seafood soup (jeonbok mulhoe).

The restaurant uses high-quality seaweed from Gijang and aims to elevate the miyeok-guk experience. It has become a popular destination for families, tourists, and even children who are usually picky eaters.
