Korean Pumpkin Porridge: A Comforting Bowl of Autumn

Korean pumpkin porridge, or danhobak juk, is a beloved comfort food that warms the soul on chilly days. Made with sweet pumpkin, rice, and a hint of sweetness, this porridge offers a delightful blend of flavors and textures. Let's delve into the recipe and explore what makes this dish so special.

Ingredients:
1 small pumpkin (about 1.5 pounds), peeled and cubed
1 cup short-grain rice
6 cups water
1/4 cup granulated sugar
A pinch of salt

Cook the rice: In a large pot, combine the rice and water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the rice is tender.
