Gyeongju, the ancient capital of the Silla Kingdom, is renowned for its UNESCO World Heritage sites and deep-seated historical roots. At the heart of this movement are two distinct establishments: Hwasu Brewery, a pioneer in craft beer, and Gim More Makgeolli, a beacon of traditional rice wine innovation.

A New Generation of Tradition at Hwasu Brewery 

Located in the scenic Bomun Tourist Complex, Hwasu Brewery stands as a testament to the growth of Korea's craft beer culture. This brewery is committed to preserving heritage by fermenting its rice wines in time-honored traditional earthenware pots. However, its approach is anything but old-fashioned. The brewery's philosophy centers on the Korean concept of "Heerol-aerak" (희로애락), which encapsulates the full spectrum of human emotions—joy, anger, sorrow, and pleasure. Gim More’s signature makgeolli lineup is a vibrant showcase of Gyeongju’s local flavors. The Sillabong Makgeolli uses a local citrus variety to create a bright, refreshing profile, while the Glutinous Barley Makgeolli provides a rich, earthy flavor. The distinguishing feature of Gim More Makgeolli is its exceptional smoothness and light body, which lacks the heavy, often cloying texture of conventional makgeolli.
