Breaking Barriers with Wok and Will: The Rising Star of Female Chinese Cuisine, Chef Jung Ji-sun

The fiery dance of flames beneath a massive cast-iron wok, expertly wielded with a single hand – this image has long been synonymous with the male-dominated realm of Chinese cuisine. The perception that the demanding and rugged nature of the Chinese culinary world makes it an insurmountable challenge for female chefs is swiftly being dismantled by the remarkable Chef Jung Ji-sun. With 17 years of dedicated experience as a specialist in Chinese cuisine, Chef Jung stands as a testament to skill, perseverance, and the breaking of traditional boundaries.

The rise of "cook-bang" (cooking shows) has propelled the once understated "cook" into the coveted role of "chef," a profession now enjoying celebrity-like status. Various cooking programs have introduced a plethora of "star chefs," many of whom command a popularity rivaling that of entertainers. Interestingly, the majority of these televised culinary figures are men, a stark contrast to the traditional association of "cooking" with the female domain. Amidst this landscape, a noteworthy female chef has emerged, specializing in the very discipline considered arduous even for men: Chinese cuisine. This culinary trailblazer is none other than Jung Ji-sun, a seasoned professional with 17 years under her belt.

Jung Ji-sun: A Force Recognized by a Legend

Chef Jung's accolades include a Special Gold Prize at the Qingdao Korea-China-Japan Culinary Competition organized by the World Association of Chinese Cuisine. This recognition speaks volumes about her exceptional talent and dedication to her craft.

Contrary to the expectation of a formidable physique often associated with Chinese chefs handling heavy woks and intense heat, the Jung Ji-sun one meets is of average build with a distinctly feminine demeanor. She began her narrative by recounting her initial foray into the culinary world.

"While contemplating my career path in high school, I happened to work part-time at a buffet restaurant, and I found learning to cook incredibly enjoyable," Chef Jung shared. "It was then that I attended a culinary academy and obtained certifications in Korean and Western cuisine. After graduation, I was formally employed by the same buffet restaurant. However, working in the actual kitchen proved to be much more challenging than I had anticipated, leading me to question my decision. Ultimately, I reasoned that all professions have their difficulties, and I should pursue what truly fascinated me, which led me to enroll in the Hotel Culinary Arts program at Hyejeon University."

Lee Yeon-bok, a veritable icon in the Korean Chinese culinary scene, has lauded Chef Jung's exceptional abilities, stating, "In the culinary field, Chinese cuisine is particularly challenging for women, making female chefs very rare. Chef Jung Ji-sun is a remarkable talent who transcends these limitations." This endorsement from a titan of the industry underscores Chef Jung's skill and resilience. The question then arises: with Korean, Western, and Japanese culinary options available, what drew her to the demanding world of Chinese cooking?

"While attending Hyejeon University's evening program, I serendipitously found employment at a Chinese restaurant," she explained. "It was there that I was captivated by the dazzling world of Chinese cuisine and its mastery of fire. I knew then that my path lay in Chinese cooking. Subsequently, I resolved to learn authentic Chinese cuisine firsthand, and immediately after graduation, I boarded a plane to China. It was like hitting the ground running, battling language barriers and adapting to an unfamiliar environment while immersing myself in the flavors, techniques, and experiences of Chinese cooking. After three invaluable and fulfilling years, I returned to Korea."

Forging Skill Through Grit, Not Just Brawn

Seventeen years have passed since Chef Jung embarked on her journey as a Chinese chef, each day a battle in the intense heat of the kitchen, constantly overcoming the prejudice associated with being a woman in her field. The kitchen is a space fraught with potential hazards: roaring flames, scalding oil, boiling water, and razor-sharp knives. A moment's inattention or a single misstep can lead to serious accidents. This necessitates an unwavering awareness of safety protocols and a constant state of alertness. Chef Jung recounted a past incident while working at a hotel's Chinese restaurant where her finger got caught in a noodle-making machine, resulting in a severe injury. In a critical situation where amputation was a real possibility, her primary concern was not her own pain but the potential fear her accident might instill in her junior colleagues. Displaying the finger that required numerous stitches, she now laughs it off, saying, "The scars have faded quite a bit now."

"Especially in the culinary field, if you harbor the sentiment of 'I'm a woman,' you won't succeed," she asserted. "In any endeavor, it's not about the difference between men and women; it's solely about your personal battle. While men may have a physical advantage, women often possess superior dexterity and sensory perception. Ultimately, it's not a matter of gender but rather who brings strong will, passion, and perseverance to excel in their chosen field."

Anticipating a Future of Empowered Female Chefs

Chef Jung Ji-sun has gained further recognition through occasional appearances on popular cooking shows like "Please Take Care of My Refrigerator," where she showcases her expertise in Chinese cuisine. "After appearing on television, many students have approached me with questions, and I feel a sense of accomplishment as a chef seeing their growing interest in Chinese cooking," she shared. She has also authored a cookbook titled "Different Chinese Cuisine" and recently published her second book on easily preparing dim sum, titled "The Queen of Dim Sum." Notably, her dim sum cookbooks are the first of their kind.

In closing, Chef Jung shared a personal tip for mastering Chinese cuisine:

"Chinese cuisine offers a diverse range of flavors depending on the sauce combinations. I enjoy bringing out the inherent taste of the ingredients and then creating my own unique sauces to complement them. By experimenting with the proportions – understanding how half a spoonful differs from a full spoonful – and striving for the optimal blend, you can create even more delicious Chinese dishes."

With a hopeful gaze towards the future, Chef Jung expressed her wish to see many more confident and passionate female chefs who love their work. Her unwavering determination and passion in forging her own path in a traditionally male-dominated field serve as an inspiration to all.
