Japanese Culinary Students Experience the Depth of Jeonbuk Beyond Recipes

The Jeonbuk Culture and Tourism Foundation successfully promoted the region's rich gastronomic and traditional culture by hosting a food and culture tour in Jeonju for 23 participants of the "2nd Osaka Chinsugi's Kitchen Seoul Study Abroad Program."

The program, which concluded its three-day itinerary, is designed to go beyond simple cooking instructions. It allows international students to deeply understand lifestyle cultures, traditions, and values embedded within Korean cuisine. For the first two days, participants honed their culinary skills at the Sim Young-soon Cooking Academy in Seoul, mastering traditional household dishes such as four distinct kimchi-based dishes, bulgogi, japchae, tri-colored seasoned vegetables (samsek namul), and shrimp pancakes.

On the final day of the program, the journey extended southward to Jeonju, a city renowned as a UNESCO City of Gastronomy and a repository of Korean traditional heritage. The delegation experienced authentic local flavors by savoring Jeonju Bibimbap at Haseokyoung Gamasot Bibimbap, a restaurant celebrated for its deep culinary roots. Following the meal, participants engaged in a traditional Korean tea ceremony at the Jeonju Hyangbyeok Cultural Center, where they learned the etiquette and philosophy behind Korea's tea culture. The itinerary culminated with a formal dinner at Honamgak, exposing the students to a wide spectrum of Jeonju’s exquisite local cuisine.

This field trip marked a significant milestone by bridging Seoul-based culinary education with regional field experiences in Jeonbuk. Rather than merely tasting regional delicacies, the Japanese students explored the local history, heritage, and philosophy that shaped these recipes, gaining a comprehensive appreciation of Jeonbuk’s multifaceted charm. 

Building on the success of this visit, the Jeonbuk Culture and Tourism Foundation plans to expand strategic partnerships with overseas travel agencies, related organizations, and specialized food-and-culture programs in Japan. The foundation aims to continuously develop experiential tourism products centered around Jeonbuk’s food and traditions to attract a larger volume of international travelers.

Lee Gyeong-yoon, President and CEO of the Jeonbuk Culture and Tourism Foundation, emphasized the significance of the event, stating that extending the itinerary of Japanese culinary learners to Jeonbuk successfully showcased the true depth of the region’s food and culture. He added that the foundation will continue to collaborate with global agencies and local tourism networks to market immersive content and actively draw foreign tourists to Jeonbuk.

Meanwhile, the foundation remains committed to boosting Jeonbuk's global tourism profile. By targeting domestic and international travel agencies, industry stakeholders, and foreign visitors, the organization continues to launch multifaceted promotional campaigns to highlight Jeonbuk's world-class tourism resources on the global stage.

Context and Global Appeal of Jeonju’s Gastronomic Tourism
To fully appreciate the significance of this exchange, it is essential to examine why Jeonju stands as the heartland of Korean culinary heritage. Designated as a UNESCO Creative City for Gastronomy in 2012, Jeonju has long preserved the meticulous culinary traditions of the former Jeolla Province, which served as the Joseon Dynasty's agricultural breadbasket. The region's rich soil, coastal proximity, and historical status as an administrative hub fostered a sophisticated food culture characterized by elaborate banquets, fermented foods like premium jang (soy sauces and pastes), and a philosophy that medicine and food share the same origin (yak-sik-dong-won). 

For international culinary students, particularly from neighboring Japan—where food tourism and regional authenticity are deeply valued—Jeonju offers an unmatched immersive environment. Programs like Chinsugi’s Kitchen reflect a broader shift in global culinary education: travelers no longer seek just recipes or plating techniques; they crave cultural context, sustainable agricultural stories, and historical narratives. By moving away from standardized urban itineraries and into Jeonju’s Hanok Village, tea houses, and traditional dining rooms, the participants experienced firsthand how Korean food is intertwined with communal harmony, seasonal changes, and ancestral wisdom. 

Furthermore, South Korea's provincial tourism authorities are aggressively modernizing their strategies to attract independent and special-interest travelers from East Asia. Initiatives by bodies like the Jeonbuk Culture and Tourism Foundation are pivotal in decentralizing tourism away from Seoul. By transforming passive tourists into active culinary participants—who learn to wrap kimchi, whisk traditional green tea, and balance flavors according to traditional principles—Jeonbuk is positioning itself as an essential global destination for experiential and slow-travel tourism.
